  • 600gBeef mince (high fat)
  • 4wholeBurger buns
  • 4slicesCheese slices
  • 2largeOnion
  • 8slicesPickles
  • 4leavesLettuce
  • 1largeTomato
  • 3tbspMayonnaise
  • 2tbspTomato sauce
  • 1tbspAmerican mustard

    Make special sauce: mix mayo, tomato sauce, mustard, a splash of pickle juice, and a pinch of paprika.

    Slice onions and caramelise slowly in a pan with butter over low heat for 15 minutes.

    Divide mince into 4 balls. Season with salt and pepper.

    Heat a cast-iron pan or flat grill to very high heat.

    Place balls on the grill and smash flat with a spatula. Season the top. Cook for 2-3 minutes until edges are crispy.

    Flip, add a cheese slice to each, and cook for another 1-2 minutes.

    Toast buns on the grill. Spread with special sauce.

    Build burgers: bottom bun, lettuce, patty with cheese, caramelised onions, pickles, tomato, top bun.
